Vorschmak is believed to be the invention of Carl Gustav Mannerheim, the promoter of Finland's independence and ruler of the first republic from 1944. The Savoy restaurant on Etelaespanadi 14 prepares it best: the beef stew and mutton, with adding minced herring is kept for two days and then served with potatoes puree, beetroot or pickles. You can associate that with Mannerheim's favourite cocktail, known as Marski, and composed of snaps, vodka aquavit, dry gin and vermouth. Dinner is 65$.
